My Dad’s Chicken

Hi! So its been a long week and nothing is better then some comfort food. One of my favorite simple go to meals is my dad’s chicken. It’s comforting, hearty and just plain yummy.So without too much pomp and circumstance here it is.


  • Chicken thighs (for two people I use one package, about 4-6 thighs) bone in or bone out your choice but you want it to have skin on…you’ll understand why later
  • Crystal Hot Sauce 
  • 2 lemons
  • Lawry’s Garlic Salt
  • 2 garlic cloves

Cooking: Season the chicken with garlic salt. In a coverable frying pan place seasoned chicken skin side down and cover half way up the chicken with cold water. In the water add lemon juice of 1 and a half lemons, 2 tbsp of crystal hot sauce and the garlic cloves. Place lid on in a way to allow steam to escape and cook over medium heat for about 20 mins or until all the water evaporates. Once the water evaporates crisp up sides in the released chicken fat. 


  • 1.5 cups of enriched long grain rice
  • 1 tbsp of vegetable oil
  • 1 tbsp tomato paste
  • 2 tbsp chicken flavored bouillion
  • 3 cups of water

Cooking: Brown rice in vegetable oil. Mix tomato paste, bouillion and water. Once rice is browned stir in liquid and bring to a boil. Once boiling, cover and steam over low heat for approximately 20 mins. 


  • Romaine lettuce hearts
  • cherry tomatoes
  • salt
  • lemon juice

Cooking: Chop lettuce and halve the tomatoes, dress with lemon juice and salt. 

It might seem a little complicated but you can have everything done within 30 mins and have a comforting delicious meal after a long long day.
