Memorial Day Cookout! 

Cookouts are the best, friends, food and usually a nice fire to sit around and catch up. We went to an awesome cookout this weekend and along with the usual grown up beverages we also brought the makings of guacamole and some home made chips. 


  • 4 Ripe avocados
  • 1/2 medium chopped sweet yellow onion
  • 2 finely chopped jalapeños 
  • 2 medium chopped tomatoes
  • 1 tbsp of cilantro
  • 1 lime
  • Salt to taste

Assembly: Mash avocados in a bowl, add onions, tomatoes, jalapenos, cilantro. Once mixed add lime and salt to taste, add a little at a time and taste until its just the way you like it. You’ll need at least 2 tsp of salt, the avocados need it. 

Corn Tortilla chips:

  • Vegetable oil
  • 30-40 Corn tortillas cut into 8 pieces (cut them at least 1 hour ahead of time to let them dry a little, makes for better chips)
  • Kosher salt

Cooking: Heat vegetable oil to 375. Place cut tortilla strips in oil. Cook until you hear the oil get quiet (about 5 mins depending how many chips you put in the oil). Take them out, shake off excess oil and salt them. DONE! 

Bring this guac recipe to parties and people will love it! I had a group of girls finish the entire first batch before the rest of the party could get to them so I had to make a second batch!
