This is going to be a long long post. We finally hosted our house warming party. I wanted to try and be super chic like Ina Garten’s get togethers but then I realized that my friends would not really appreciate a good cheese plate or individual endive spoon things. So I decided to go with the memorial day theme with a mexican southern twist. I cooked for about 5 hours to get everything done. But it was worth it! People loved the food.

Deviled Eggs w/Bacon: I took this recipe from Bon Apetit, only difference is I didn’t have scallions or Dijon Mustard so I improvised
- 5-6 slices of thick cut bacon
- 12 eggs
- 2 tbsp of melted butter
- 1/3 cup of mayo
- salt and pepper to taste
Cooking: Place eggs in saucepan and fill until 1 inch above eggs. Bring to a boil, cover and remove from heat. Let sit for 10 mins. Take them out and put them in a bowl of ice water and let sit for another 10 mins. Once completely cooled, peel and halve. Take yokes and mix with butter, mayo and salt and pepper. Put mixture in large zip lock bag, cut tip of bag and use as a piping bag. Pipe mixture into eggs. Cut bacon into 1/2 inch pieces. Put bacon on egg, sprinkle with paprika and viola! Deviled Eggs!
Mini Corndogs with bacon: So there is a bacon theme…I love bacon. Bacon makes things better. Bacon makes people happy! Happy people have fun at house warming parties. Make sure you have a mini muffin tin…you know to make them mini corndogs…duh!
- 1 package of all beef hotdogs*
- 1/2 cup of melted butter
- 1/2 cup of sugar
- 2 eggs
- 1 cup of buttermilk
- 1/2 tsp of baking soda
- 1 cup of cornmeal
- 1/2 tsp of salt
- 3 strips of thick cut bacon chopped into little pieces
*cut hotdogs into 1/2 inch pieces – you won’t use the whole package but you have to buy it that way.
Cooking: Preheat oven to 375 degrees F. Whisk butter and sugar together until sugar dissolves, whisk in 2 eggs, then follow with buttermilk. Mix dry ingredients together in a seperate bowl. Add dry ingredients to wet ingredients in two batches. Finally add in bacon pieces. Spray muffin tin with non-stick cooking spray (preferably butter flavored). Spoon in one tbsp of mixture into each muffin tin and then place hotdog into the center. Bake for 8-10 mins until cornbread is golden brown. Serve with ketchup and/or mustard.
Mini Ground Beef Tacos:
- 1 pound of ground beef
- 1/2 medium onion chopped
- 2 cloves of garlic
- 1 tbsp of olive oil
- 1 package of taco seasoning (i used ortegas)
- 1 palmful of cumin
- 1/2 palmful of chili powder
- salt and pepper
- Tostitos scoops
- Homemade roasted salsa (previous posts)
- shredded mexican cheese
Cooking: Saute onions in olive oil until transluscent, add garlic and cook for 1-2 mins. Add ground beef and brown. Drain meat. Add taco seasoning (check package for instructions but mine said to add some water). Add cumin, chili powder, salt and pepper. Scoop ground beef onto tostito with some cheese and salsa on top…mini tacos!
Mini Chicken and Waffles:
- 10 chicken tender (cut in thirds)
- 2 cups of buttermilk
- 1 1/2 cups of all purpose flour
- 1 tbsp of garlic powder
- 2 tsps of smoked paprika
- 1 tsp of salt
- 1/2 tsp of onion powder
- 1/2 tsp of black pepper
- vegetable oil
- aunt jemima buttermilk waffle mix (follow the instructions)
- Honey Butter (honey mixed with melted butter)
- Spicy Honey (honey mixed with Crystal Hot Sauce)
- Aunt Jemima syrup
Take cut chicken tenders and put them in a bowl with the buttermilk and refrigerate for a few hours up to overnight. Mix flour, garlic, paprika, salt, onion powder and black pepper in a bowl. Heat your vegetable oil, I have a deep fryer and heated it to 375F. Take chicken and dredge in your flour mixture. Shake of excess and place in your heated oil. I cooked mine for 4-5 mins. Cook your waffles just like the box says.
Cut your waffles in 4s, place a piece of chicken on top and enjoy! These were definetly the highlight of the party. Everyone kept raving over them.
- 1/2 lb of bittersweet chocolate chips
- 1/2 lb of semisweet chocolate chips
- 1 cup of heavy cream
- 1 tbsp of prepared coffee
- 1/2 tsp of vanilla
- 1 cup of white chocolate chips
Cooking: Heat cream in saucepan just until it boils. let cool for 20 secs. Place chocolate chips into bowl. Pour heated cream in bowl and mix with whisk until all the chocolate is melted. Mix in vanilla and coffee. Set aside. I put it in the fridge for a bit. With a mini ice cream scoop I scooped out a ball and placed it on a sheet pan lined with parchment paper. I put it in the fridge for an hour. I melted the white chocolate by putting it in the microwave for 30 seconds then mixing the chips until they melted. I took the refrigerated truffles out and drizzled the melted white chocolate on them then put them back in the refrigerator until the party started! I took them out of the fridge after dinner and served immediately.
I know this was a long one. Trust me my feet felt it after all the cooking but it was so much fun and everyone had a great time!
