Homemade Bar Food

Game nights are awesome. We in this house have different types of game nights, having friends over and playing things like cards against humanity or charades, but there is also sports game nights, football and basketball rule this house but we’ll pretty much watch any championship series. 

With that last night was game 4 of the NBA playoffs, so in honor of that I decided to try my hand at some homemade bar food. Going out would be simpler but we’ve got a nice game watching set up and no crowds! 

Menu: 

  • Red Hot Chicken Wings
  • Lemon Pepper Chicken Wings
  • Bacon Cheddar Ranch French Fries

We also had celery sticks and carrots but if I have to tell you how to prepare that you shouldn’t be in a kitchen.

  

Red Hot Chicken Wings:

  • 1 package of chicken wings, cut at joints to seperate wing and leg (also cut off that tiny weird piece)
  • 1/2 cup of melted butter
  • 1/2 cup of Frank’s Red Hot Original Hot Sauce 
  • Vegetable Oil

Cooking: So if I haven’t said it before I’m telling you now. One of the greatest kitchen tools/gadgets I’ve ever bought was a deep fryer. I have Emeril’s TFal but you do your research and pick the one you like. 

Bring oil to 375F. Dry the chicken wings really well. Drop in oil and cook for 15 mins. Make sure you brown all sides. While the chicken is frying mix the butter and hot sauce. Taste it because you might need to add more hot sauce depending on how spicy you like your wings. As soon as your wings come out of the fryer shake off all extra oil and drop in the hot suace. Toss around until the wings are completely covered and serve w/blue cheese dressing or ranch…or all by themselves! 

  

Lemon Pepper Wings: 

  • 1 package of chicken wings, cut at joints to seperate wing and leg (also cut off that tiny weird piece)
  • 3 tbsps of lemon pepper seasoning (i used McCormicks with garlic)
  • Vegetable Oil

Cooking: Bring oil to 375F. Dry the chicken wings really well. Drop chicken wings in oil and cook for 15 mins. Brown all sides. Once cooked shake off extra oil and drop in a bowl. Pour lemon pepper seasoning on wings and toss around until completely covered. Serve with blue cheese dressing or ranch…or (again) all by theselves! 

   

Bacon Cheddar Ranch French Fries: I’m sure everyone has had some form of this. My personal favorite is from Dat Dawg in New Orleans on Magazine Street. 

  • 4 medium russet potatoes, peeled and cut into 1/4 inch sticks
  • Vegetable Oil
  • Salt
  • 3/4 cup of shredded mexican cheese
  • 5 pieces of butcher cut applewood smoked bacon, cooked to a crisp then chopped up

Cooking: Bring oil to 375F (this is where a deep fryer comes in handy b/c with all this food I still don’t have a huge mess on my hands). Drop half the fries into the oil. Cook until lightly golden brown, about 3 mins. Take out and place on plate with paper towels on it to drain excess oil. Drop second half of fries in the fryer. Same thing about 3 mins. Take out. Switch and put the first batch back in and cook for another 3-4 mins or until nice and brown. Same thing with second batch. 

Take off draining plate and put on cookie sheet lined with aluminum foil. Cover the fries with half the cheese and half the chopped bacon. Then add second layer of cheese and bacon. Place under broiler until cheese is nice and bubbly. Add some chopped scallions if you have them. I didn’t have any so I went with out it. 

Warriors won and my food was a hit. Good times all around!
