“Traditional” Chicken and Roasted Potatoes Dinner


Sometimes you just want something easy for dinner. Easy usually means ordering in, and lets be real I live in NYC so ordering in is the easiest thing to do for dinner. Easy can also mean borigng. And boring doesn’t taste good. We’re also trying to eat healthier. For most people healthy also means boring. For me healthy means finding flavor in other ways. Lemons! Lemons and garlic can make even boneless skinless chicken breast less boring. So here we go. 

Chicken w/pan sauce:

  • Boneless skinless chicken breast, sliced in half
  • 2 tbsps of olive oil
  • 2 tbsp of butter
  • salt and pepper
  • 4 cloves of garlic, smashed
  • 1/2 cup of chicken stock
  • 1/2 tbsp all purpose flour
  • juice of 1/2 lemon

Cooking: Heat oil and 1 tbsp of butter in a sauce pan. Season both sides of chicken with salt and pepper. Dropin smashed garlic cloves.  Add chicken and cook until golden brown. Sprinkle half the lemon juice over the cooked chicken. Take chicken out of pan. Add chicken stock, remaining butter and flour, whisking all ingredients together until the flour dissolves. Bring to a boil then reduce to a simmer. Add lemon juice. Taste for salt. If needs more add a little more. 

Roasted potatoes: 

  • 2 russet potatoes 
  • 2 tbsp olive oil
  • 1 tbsp Rosemary
  • Salt and pepper

Cooking: heat oven to 375F. Peel and cube potatoes. In a bowl drizzle olive oil, Rosemary, salt and pepper. Make sure all the potatoes are coated. On a lined cookie sheet bake for 25 mins until golden brown. 

Green beans:

  • 1 lb of green beans 
  • 2 tbsp of olive oil
  • 1 tbsp of butter
  • 2 garlic gloves, smashed 
  • Salt and pepper 

Cooking: Heat oil and butter in a sauce pan. Add smashed garlic. After a minute add green beans and season with salt and pepper. Cook until green beans are heated through and wilted slightly but still keep a crunch.
