On of my husband’s favorite chain restaurants is On The Border. This place is actually pretty good however I think each time we go we order the same thing. These delicious southwest chicken tacos. Think flour tortilla filled with chicken and an awesome chipotle mayo, fried onion strings and melted cheese. Your mouth should be watering…if its not then I don’t know how to help you. Just kidding I do…make the recipe below and after you eat it your mouth will water just thinking about it.
- 1 lb of chicken (tenders, breasts, thin breasts)
- 1 tsp of cumin
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp pepper
Cooking: Chop chicken into bite size pieces. Combine all the seasonings then mix with the chicken bites ensuring all pieces are coated. Let sit for 10-15 mins.
In a medium heated pan cook chicken in 1.5 tbsp of olive oil until browned.
- 1/4 cup of mayo
- 2 chipotle peppers in adobo sauce
- 1 tbsp of lime juice
Cooking: Blend all ingredients until smooth.
Additional ingredients: crispy fired onions, shredded Mexican cheese and flour tortillas
Tip: When you are heating your tortillas added the shredded cheese so that it melts while the opposite sides gets slightly crispy (not too crispy or you won’t be able to fold the tortilla).
