Chipotle Chicken tacos

Chicken, chicken, chicken…if you eat it too much you get tired of it, but it is good for you so you want to keep eating it. Well here’s a way of mixing it up…make your own chipotle sauce!

Chipotle sauce 

Chipotle Sauce:

  • 2 dry ancho chiles
  • 2 chipotle chiles
  • 2 tomato
  • 3 garlic cloves
  • 1/4 spanish yellow onion
  • salt and pepper

Cooking:

Boil 2 cups of water and add dried chilies for 5 mins or until soft. Remove stem and veins.

Weigh them down so the entire chile gets soft. 

Under a broiler char the tomato onion and garlic (about 5-7 mins).

In a blender, blend all ingredients and taste for seasoning. Set aside.

Chipotles in adobo (out of a can) keep these in my fridge at all times! 

Chicken:

Browned chicken tenders
  • 1 package of chicken tenders
  • salt and pepper
  • 1 tbsp of olive oil

Cooking: 

Heat a cast iron skillet to medium. Add olive oil, seasoned chicken tenders and cook until golden brown (about 5-10 mins).

Chop up the cooked chicken into small bites. Add back into the skillet.

Add the sauce into the pan. If the sauce is too thick add a little bit of the water from the softening chiles.

Chicken and sauce…

Allow the sauce and the chicken to really combine, keep at a very low simmer for a few minutes until the sauce reduces.

Make the tacos!
