If you like to travel and go find places to eat you should definitely go and check out New Orleans. There are so many places that are absolutely amazing, Cochon, Cochon Butcher, Boucherie, Willie Mae’s Scotch House, Guy’s Po Boys, Dragos, Acme…the list goes on and on. Pretty much an overall amazing food city. They also have this cute little spot on Magazine Street named Surrey’s. Two places actually, lower garden and uptown.
This place is amazing, everything I have eaten here was delicious! There’s always a line so don’t go if you’re in a hurry, but let’s be real, don’t go anywhere in New Orleans if you’re in a hurry. Well one of the items that we always ordered was their Costa Rican Breakfast and since I don’t live in New Orleans anymore and was craving this here you go.
Costa Rican Breakfast:
- 2 cups of cooked white rice
- 1 – 2 avocados
- 3 links of spicy sausage
- 1/4 white onion
- 2 small tomatoes
- lime juice
- 2 tsps of chopped cilantro
- 1 tsp of chili flakes (or as much as you like)
- 6 eggs
- 1 1/2 tbsp of butter
- salt and pepper to taste
Cooking: Cook sausage until sausage is nice and browned.
Remove the sausage and set aside. In the left over sausage grease add the butter and cook the eggs in the butter and sausage grease remains. Scramble.
(This is equally delicious with poached eggs or fried eggs). Season the eggs with salt and pepper.
Dice the tomatoes, onions, mix with cilantro, chili flakes and the juice of 1/2 a lime. Season with salt.
In a bowl scoop in some rice, top with sausage, eggs and veggie mixture. Garnish with slices of avocado and either shredded cheese or cotija cheese.
