Corn Pudding!

Going to a BBQ or a pot luck is always a super fun time, but sometimes finding what to take to the event is difficult. People are picky, have different tastes, will it go with whatever the mains are…well look no further! Corn Pudding…I mean everyone loves corn bread…this is a little different, a little wetter but still delicious! Oh and seriously so easy.

Corn Pudding:

  • 1 box of jiffy corn mix
  • 1 can of cream style corn
  • 1 can of whole kernel corn
  • 1/4 cup of butter (melted)
  • 1 can of diced green chilies
  • 1 egg
  • 1/4 diced onion
  • 1 cup of sour cream
  • salt and pepper
  • 2 handfuls of shredded mexican cheese

Cooking: Butter a 8×8 pan and heat oven to 350F. In a big bowl mix all ingredients. Pour into buttered dish. Bake for 55 -60 mins, it will jiggle but as long as a knife or toothpick come out clean in the center you’re good.

Take out. Cover with cheese. Put back into oven under broiler for 3-4 mins until cheese is nice and melted. Cut and devour!
