My mama used to tell me about a dinner my grandmother used to make for them back in the day. It was a very basic (and cheap!) meal but she always smiles when she tells me the story. I had been craving hominy and beans but I wanted to jazz it up! So I added bacon and roasted red peppers!
Hominy & Beans:
- 1 can of mexican style hominy – drained and rinsed
- 1 can of pinto beans – drained and rinsed
- 1/2 jar of roasted red peppers – diced
- 6 slices of thick cut bacon (cut into 1 in pieces)
- 1/2 spanish onion
- 3 garlic cloves coarsely chopped
- 1 tbsp chili powder
- 1 tbsp cumin
- 1 tbsp smoked paprika
- 1 tsp salt
- 1/2 tsp pepper
- 2 bay leaves
- 1 tbsp olive oil
Cooking: In a large pot add olive oil and heat to medium. Add diced onions, sweat them, add garlic. After a minute add bacon. Cook bacon to whatever consistency you’d like it. For this I wanted the bacon to be meaty instead of crunchy so I gave it a little sear then let it cook with everything else.
After you cook the bacon, add the hominy, beans, roasted red papper, 3 cups of water, cumin, paprika, chili powder, bay leaves, salt and pepper. Stir.
Cover with a lid and cook over medium-low for 25-30 mins.Add 1/2 cup of water. Lower heat to low and cover for another 25 mins.
The color will be nice and redish..full of so much flavor!
Serve in a bowl topped with some dabs of goat cheese, or cotija cheese, or queso fresco! YUMS!
