New Year’s Day Breakfast!

New Years is a time of celebration and festivities, however, a lot of people partake in the free flowing (or very costly) libations that help us in celebrating this event. The next day you need something hearty and very tasty to help you with your possible (hopefully not) pounding head and uneasy stomach. This would be Chilaquiles!!! Think of a tortilla and cheese casserole, then raise your expectations! Just kidding but this is pretty delicious and an easy meal to make for a few or a lot.

Chilaquiles:

  • 30 corn tortillas; cut into chip size
  • 3 medium tomatoes, roasted under broiler until charred
  • 1-2 medium jalapeños, roasted
  • 1 medium spanish onion, 1/2 roasted under broiler until charred and other half diced and softened in a saute pan over medium heat
  • 1-2 cups of shredded Monterey jack cheese

Cooking: In a deep fryer or a deep pan fry cut tortillas until nice and crispy. 375F for 3-4 mins until golden brown. As soon as you take them out of the oil salt them to your liking.

Under a broiler roast the tomatoes, jalapeños and onion. Once charred, allow to cool then place all ingredients into a blender or food processor, blend until smooth and add salt to taste.

In a deep pan place a layer of tortilla chips.

 Add a layer of cheese and diced onions.

Cheese…Cheese…Cheese…

Then add a portion of the sauce.

Repeat until you have used all your ingredients. Cover the pan and over low heat allow the cheese to melt and all the ingredients to combine (about 10-15 mins).

In a separate pan cook some mexican style chorizo and cover the chilaquiles with the chorizo.

Add some cooked chorizo and a few slices of bacon!
